Ingredients

  • ¾ cup almonds
  • ¾ cup pecans
  • ½ cup cashews
  • ¼ cup walnuts
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • 2 tbsp sesame seeds
  • 1 tsp cinnamon
  • 1 tsp sea salt
  • ¼ cup honey
  • ¼ cup coconut oil
  • 1 tsp vanilla extract
  • ¼ cup dried sugar free cranberries
  • ¼ cup coconut flakes (optional)

Instructions

  1. Preheat oven to 300 degrees. Line a large baking sheet with parchment paper.  
  2. Put the nuts, seeds, cinnamon, and salt in a large bowl.  
  3. In a small saucepan, combine the honey, coconut oil, and vanilla. Heat on low until melted and smooth. Pour over the nuts and stir to coat. 
  4. Transfer mixture to baking sheet and bake for 40 minutes, stirring halfway through.  
  5. Remove from oven and let cool completely. Break into small pieces. Store leftovers in an airtight container.
