Ingredients
- ¾ cup almonds
- ¾ cup pecans
- ½ cup cashews
- ¼ cup walnuts
- ¼ cup pumpkin seeds
- ¼ cup sunflower seeds
- 2 tbsp sesame seeds
- 1 tsp cinnamon
- 1 tsp sea salt
- ¼ cup honey
- ¼ cup coconut oil
- 1 tsp vanilla extract
- ¼ cup dried sugar free cranberries
- ¼ cup coconut flakes (optional)
Instructions
- Preheat oven to 300 degrees. Line a large baking sheet with parchment paper.
- Put the nuts, seeds, cinnamon, and salt in a large bowl.
- In a small saucepan, combine the honey, coconut oil, and vanilla. Heat on low until melted and smooth. Pour over the nuts and stir to coat.
- Transfer mixture to baking sheet and bake for 40 minutes, stirring halfway through.
- Remove from oven and let cool completely. Break into small pieces. Store leftovers in an airtight container.
