- 1/2 cup raw cashews
- 1/2 cup pumpkin puree
- 2 tbsp tahini
- 2 tbsp lemon juice
- 1 tbsp extra virgin olive oil
- 1/4 tsp salt
- 1/4 tsp cumin
- 1/8 tsp cayenne
- 1/2 tsp pumpkin pie spice
- 1 garlic clove
Instructions
Soak raw cashews in water overnight and then drain and rinse them. Put the soaked cashews and the pumpkin into a food processor with all the remaining ingredients and process until smooth. Drizzle a little bit of olive oil on top before serving. Garnish with pumpkin seeds and cayenne pepper if you’d like. Makes a great dip with veggies or Simple Mills crackers!
