Ingredients:

  • 4 cups of fresh Arugula
  • 1 tsp dried basil
  • 2 cups sliced raw Brussel sprouts
  • 1 pear diced
  • ½ cup raisins
  • ½ cup of almond or pecans

Dressing:

  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • ½ tsp pepper
  • ½ tsp salt
  • ½ cup avocado or olive oil
  • 1 tbsp red wine vinegar or apple cider vinegar

Directions:

Mix mustard, lemon juice, pepper, salt, oil, and vinegar in a jar with a lid.  Put remaining ingredients in a serving bowl.  Shake jar with dressing and put on salad when you are ready to serve it.
