• 3 slices of sugar free bacon
  • 3 pounds thin cut skinless chicken breast or thighs
  • ¼ cup diced green onions
  • 1 tbsp coconut oil
  • 2 tbsp diced garlic
  • 1 and ½ cup fresh spinach


In a large skillet cook chopped up bacon until lightly browned.  Then add coconut oil.  Add green onions and garlic.  Cook about 3 minutes and then add chicken and cook 3 to 4 minutes on each side.  Add spinach and cook until spinach is soft and chicken is lightly browned.  Serve over a bed of cauliflower rice or cubed cooked sweet potatoes if desired.
