4 sugar free breakfast sausage patties
1 mashed avocado
½ sliced onion
1 tsp olive oil
4 green chili slices (optional)
Salt and pepper to taste
Cook sausage patties then remove from skillet. In the same skillet add olive oil and caramelize onions. Mash avocado onto breakfast sausage and season with salt and pepper. Spoon caramelized onions onto the avocado. Crack eggs into skillet and cook 3 minutes until whites are set and yoke is still runny. Place egg on top of mashed avocado. Place green chili on top of egg.
