- 4 pastured eggs
- 1 ripe banana
- 1-2 Tablespoon bacon fat (from pastured, uncured, sugar free bacon)
- 1 piece of crumbled sugar free bacon
Directions:
- Heat bacon fat in a medium skillet over medium-high heat
- Put eggs and banana into a blender. Blend until smooth, about 30 seconds
- Pour mixture into hot skillet
- Crumble bacon on top
- Cover and turn heat down to medium-low
- Cook until there is no more liquid egg, and the edges begin to brown
- Garnish with bacon bits
- Serve
