• 4 pastured eggs
  • 1 ripe banana
  • 1-2 Tablespoon bacon fat (from pastured, uncured, sugar free bacon)
  • 1 piece of crumbled sugar free bacon


  • Heat bacon fat in a medium skillet over medium-high heat
  • Put eggs and banana into a blender. Blend until smooth, about 30 seconds
  • Pour mixture into hot skillet
  • Crumble bacon on top
  • Cover and turn heat down to medium-low
  • Cook until there is no more liquid egg, and the edges begin to brown
  • Garnish with bacon bits
  • Serve
