Ingredients
½ green bell pepper cut lengthwise into
about ¼ inch thick strips
1 shallot peeled and diced
1 ½ tsp Italian seasoning
Salt and pepper to taste
1 and ½ tbsp avocado or coconut oil
1 cup cacciatore-style tomato sauce
(can use spaghetti sauce)
2 chicken breast
Directions:
Add Italian seasoning, salt and pepper to chicken and lightly rub with avocado oil. Heat 1½ tablespoons of avocado or coconut oil in a pan. Add chicken, shallot and bell peppers to a hot pan. Cook 2 to 3 minutes stirring veggies occasionally. Flip the chicken and cook another minute. Transfer all ingredients from the pan to a backing dish. Preheat oven to 400 degrees. Cover with cacciatore sauce and place in heated oven. Cook for 12 to 14 minutes. Serve.
