Ingredients
- 3 slices of sugar free bacon
- 3 pounds thin cut skinless chicken breast or thighs
- ¼ cup diced green onions
- 1 tbsp coconut oil
- 2 tbsp diced garlic
- 1 and ½ cup fresh spinach
Instructions
In a large skillet cook chopped up bacon until lightly browned. Then add coconut oil. Add green onions and garlic. Cook about 3 minutes and then add chicken and cook 3 to 4 minutes on each side. Add spinach and cook until spinach is soft and chicken is lightly browned. Serve over a bed of cauliflower rice or cubed cooked sweet potatoes if desired.
